薑汁撞奶



Long long time ago,旺角有家〈燉奶佬〉,門外紙牌寫着薑汁撞奶,當時我只聽過薑汁撞奶但從沒有見過,所以還沒有食晚飯就走進去先食甜品。〈燉奶佬〉說薑汁撞奶一定要用順德水牛奶才撞得成功,所以他們每天從順德運來新鮮水牛奶。至於為何一定要用水牛奶;黑白乳牛的奶跟水牛的奶有甚麼不同,香港為何不見有水牛奶賣,薑汁撞奶為何會凝固,一連串問題他們卻答不出來。不過,他們是當着我面前撞奶的,我親眼看着奶凝固,覺得很神奇。自此,每個星期都食兩三次,直至由太子到尖沙嘴都有賣薑汁撞奶,直至我發現薑汁撞奶不必用水牛奶;甚至用奶粉都可以撞奶。

今天薑汁撞奶已經沒有秘笈,但不知為何薑汁撞奶越賣越少,反而薑汁燉奶越賣越多。

據各路人馬提供的資料,只要將老薑磨汁,牛奶煮至70˚C左右,從高處撞下,奶就會凝結成豆腐花狀。

聽起來很簡單,不過,老薑不是隨時隨處可以買到,要不要買個溫度計回家呢?似乎很大費周章的一回事。

惟有啟動我的實驗室;即是我家廚房。薑只是超級市場買來的普通薑,奶用微波爐叮熱,從一分鐘開始,每次加十秒,終於在一分三十秒…………






 薑刮皮磨茸,用篩及叉壓出薑汁,薑汁寧多勿少大概一兩湯羹。
 室溫牛奶一碗(大概150ml)加適量練奶,放入微波爐叮一分三十秒,取出攪兩下以防練奶沉底。
 攪勻薑汁(薑汁靜止太久會沉澱),撞入牛奶,等一兩分鐘就會凝固。

I think, I would able to finish 2 since I would start running to lady room after drinking milk. Actually, I would like more, but I won't able to do so. No more messages.
