蒟蒻



買了一盒蒟蒻粉,內有三小包,每包可以弄出四五個espresso杯大小的蒟蒻。




(一)

蒟蒻粉、250ml水、菊花、蜜糖、提子、杞子



菊花放入熱水煲一兩分鐘,熄火焗五分鐘,隔去菊花,趁熱加入蒟蒻粉攪勻,再加少許蜜糖攪勻。杯內放進提子及杞子,倒入菊花蒟蒻漿。

蒟蒻粉不同魚膠粉,凝固得非常快,還溫熱時已經凝固,所以一定要趁熱快手倒入杯模內。

不夠快的後果就是脫模時,蒟蒻會支離破碎。



加點柚子肉遮醜,還是很難看呢。






(二)

有了一次經驗,對蒟蒻粉有點了解,再來。

蒟蒻粉、270ml水、龍眼、玫瑰花、玫瑰露、杞子、桂花糖





龍眼放入熱水煲五分鐘,再加入玫瑰花及少許玫瑰露,熄火焗五分鐘,隔去龍眼及玫瑰花,加蒟蒻粉攪勻。杯內放杞子,倒入蒟蒻漿。

這次似模似樣了,吃時再加點桂花糖。








(三)

蒟蒻粉、270ml水、無花果、菊花、桂花糖

無花果放入熱水煲五分鐘,再加入菊花煲一兩分鐘,熄火焗五分鐘,隔去菊花及無花果,加入蒟蒻粉攪勻,再加少許桂花糖攪勻,倒入杯模內。

    [版主回覆12/10/2008 21:56:00]上海南貨舖,即係賣大閘蟹賣上海年糕湯丸 嗰 啲 舖頭,有 啲 醬料舖都有架, 仲有超級市場都會間中見到,不過就 上海南貨舖 嗰 啲會好食啲。

    [版主回覆12/11/2008 22:38:00]蒟蒻質地近似 Jello , Jello 用魚膠粉做,蒟蒻係用植物根部做, vegetarian 都可以食。

    我都係買左呢隻 蒟蒻粉, 不過 上次試做時, 可能水太多, 做出黎後好唔實 ....

    隻蒟蒻粉話要 250m l 水,你有冇跟足呀?我都覺得佢好易散,又凝固得快,手慢啲倒落個杯度就會甩甩漏漏一舊舊。

  8. Isis: Athough Nicole helped me to ask already, I still need to say - which one is mine????
    I really think that we should have a place called 一刻舘,and the main target customers are those people who just lost in love. You and Nicole are responsible to make the dessert and cheesecake since people tend to eat sweet after losing their beloved. I can become their counselor in the 一刻舘. Let them have time to talk, then they may want more dessert again! Hahaha.... I dream again!
